So each item has weight, how is carrying things going to work? Will I have to empty half my inventory in order to carry a rock or rowboat, or will liftable structures not have weight?

I would assume that they do have weight or maybe a movement debuff (like now you move very slowly if you carry something). Of course it's mere hypotheses.

Same goes for towing things, is a sled with empty chests lighter to tow than one with massive boulders?

Hypothetically speaking, if we can pick up more than we can move with, ie whilst standing by a shed, if something happens that causes the shed to close, for instance a crash, or a sneeze or something, does opening the shed count as moving? Because we aren't moving, we were able to stand here and access the shed, the only thing that has happened is the shed has closed. Of course, if we can't pick up more than we move with, and that is only a "feature" that will occur when the patch hits, then this doesn't matter so much.

I vote for suffering damage if you carry too much stuff. Then you get KO'd. Fun!

Either way you can fill some poor noob's leanto inventory up with rocks scent free to have them be rooted in place wherever they may be.
