Maybe a light version of the "Squank", we can call them "Sneak Snuanks" and they fight back when attacked.

American Bison could make pretty good non-darkness 'boss animal'. Moose could also work. Both would not activly attack and thus would not be detramental to noobies who come across them, but they would be challenging to hunt for more advanced players. Both could charge like a deer, gore you, and pound you to the ground.

The models could also be edited from the bull and deer so it might even save time with basic animation. Just a thought.

Only if it comes with a risk of permadeath from drowning or suffocation if the bison decides to make another poop.
