A March Hare has two brains, one belongs to the original rabbit while the other one to the "mutated" rabbit.

So why simple rabbits don't have a brain?

It isn't that they don't have a brain. It's that the brain is so small that it does not provide functional material in-game and thus doesn't drop during butchering.

The lack of a brain by rabbits is by design to scale with game progression.

Have the brain as a rare chance to get from rabbits.

If you need BS tanning fluid you can boil birch bark. No rabbit brains.

Could add more food. I never ate rabbit brain but squirrel brain is amazing.
