Tomato farming.
why tomatoes?
The courthouse is also the site of the legend of Colonel Robert Gibbon Johnson proving the edibility of the tomato. Before 1820, Americans often assumed tomatoes were poisonous. In 1820, Colonel Johnson, according to legend, stood upon the courthouse steps and ate tomatoes in front of a large amazed crowd assembled to watch him do so
http://en.wikipedia.org/wiki/Salem_County,_New_Jerseyif there was any plant that should be planted in salem, it should be the tomato. there is much more history with the tomato and salem mentioned in the wiki.
but as the history in the game starts earlier than 1820 it can be debated if it should implemented. personally i would love to see it in game, just to honor both people standing by their opinion and salem / usa

Food:
as been suggested before. more craftable food.
imho it should be food from countries where colonists came from, Scandinavia, ireland, russia etc etc the list goes on.
and make sure that each branch focusing more on one specific humour, an example would be that scandinavian food would have some good Blood values, french would favor green or something along that.
