Butchering deer meat without skills

So im totally unsure as to whether this has already been addressed and I cant seem to find any posts whilst using search.

Are people aware that when butchering a deer slab without any skills in butchering you get steak from them down to cuts and further down to shreds,

I was under the assumption that without the proper skills you couldn't aquire steaks or cuts.

I don't get cuts from any other animals as of yet or steak for that matter.

on a side note I was gifted the slabs when walking around town.

could this be because the original carver had the correct skill sets?.

Slabs should always split into the same thing, butchering skills themselves do not unlock shreds/cuts/slabs per se, but instead change what you can obtain directly by butchering an animal. So splitting a slab into steaks is no different than splitting a garlic bulb while being unable to plant it. I'm pretty sure it's not a bug
